Egg and Potato Casserole
My favorite thing about this egg and potato casserole is that it’s super easy because you throw everything in one bowl. You can pretty much throw whatever vegetables you have in there, which saves food waste and it only takes a few dishes.

Ingredients
Instructions
  1. Get ingredients out and shred vegetables and cheese
  2. Grease 9×13 pan
  3. Shred potatoes and layer in bottom of pan
  4. Chop and cook bacon
  5. Crack 12 eggs into a bowl, beat yolks together
  6. Add water, salt and pepper to bowl of eggs
  7. Add zucchini, onion and garlic into eggs
  8. When bacon is finished cooking, add it to the eggs with a little grease.
  9. Add cheese and mix
  10. Pour mixture over potatoes
  11. Bake until set then Enjoy!
